Loaded Baked Potato Soup Recipe


Loaded Baked Potato Soup is a savory and delicious soup with cheddar cheese and bacon with a smooth creamy texture. This is one of my favorite soup recipes.

A Wonderful bowl of grandmas cream of potato soup.


This soup recipe is fairly new and growing in popularity very quickly with many different variations. Why? You will find that out soon enough.

Baked Potato Soup has a savory aroma, superb & rich flavor and an excellent texture.

Ingredients

2 1/2 LBS peeled Red Potatoes (1/2 inch cubes)
1 Minced small Yellow Onion
1 Very Finely Minced Red Bell Pepper
1 Minced Garlic Clove
1/2 LB Crumbled Bacon
1 C Cheddar Cheese
2 tsp Salt
1/2 tsp Black Pepper
4 C Chicken or Vegetable Stock
1 1/2 C Half & Half
2 Chopped Fresh Basil Leaves
1 1/2 tsp Hot Sauce
Sour Cream (OPTIONAL)

Preparation Tips

You can use store bought stock but for the best results and outstanding flavor I would recommend making your own Homemade Chicken stock or Vegetable stock.

Red potatoes turn brown very fast after peeling them, faster than baked potatoes. So, after peeling them, place them in a large bowl with enough cold water to cover them. (This will keep them from browning.)

The potato skins can be added to most stock recipes if you wash them thoroughly before peeling, so you can save them if you like or discard them.

Loaded Baked Potato Soup Recipe
Cooking Instructions

1. Cook 1/2 Lb bacon in a large frying pan until its crispy. Remove the bacon and set it aside. Don't eat too much of it! You will need it later.

2. Drain the bacon grease but leave about 1-2 TBS in the frying pan.

3. Then add the minced onions, garlic and red bell pepper to the grease and saute on medium high heat for about 3 minutes.

4. Add 2 tsp salt, 2 chopped basil leaves, 1/2 tsp black pepper and saute for 3 more minutes. Don't forget to stir while sauteing.

5. While sauteing pour 4 C chicken stock or vegetable stock into a large pot and turn the heat on medium.

6. After you are done sauteing the ingredients, put everything that's in the frying pan into the large pot with the stock.

7. Add 1 1/2 tsp hot sauce and potatoes to the stock and simmer for 45 minutes, stirring occasionally.

8. Turn off the heat and add 1 1/2 C Half & Half, mix well.

9. Add salt to taste.

10. Pour some of the loaded baked potato soup in a bowl and add a handful of cheddar and then top it off with some crumbled bacon. If you like you can also add a TBS of sour cream.
