Bean and Bacon Soup Recipe with Great Northern Beans
This bean and bacon soup recipe is a hearty appetizer filled with potatoes, carrots, tomato sauce and bacon in a savory vegetable stock.
This soup recipe is quick, easy and needs very little preparation.

- 1 can Great Northern Beans
- 2 Small Yellow Onions, chopped
- 2 Garlic clove, minced
- 1 Large Potato or 2 Small
- ½ Lb. Sliced Bacon
- 1 tsp. Salt
- 3 Carrots, sliced
- 4 cups Vegetable Stock
- 1 Bay Leaf
- 1 tsp. Black Pepper
- 2 Cans of 8oz. Tomato Sauce
- 1 Sprig of Fresh Thyme

- Ladle

Easily Preparing Your Bean & Bacon Soup
1. Cook a ½ lb. of bacon and set it on a plate with paper towels on it. The paper towels will help soak up all the grease. After it cools chop it up into smaller pieces.2. Peel and chop 2 small yellow onions 3. Peel and cube 1 large potato or 2 small potatoes and place them in a small bowl with cold water in it. 4. Peel and slice 3 carrots into ¼ inch slices. 5. Peel and mince 2 cloves of garlic.
How to Cook Your Bean Bacon Soup.
1. Add 4 cups vegetable stock and 2 cans of 8 oz. tomato sauce to a large pot, stir well and simmer on medium heat.
2. Add the rest of the ingredients and simmer for 15 - 20 minutes.
3. After approximately 20 minutes of simmering take the thyme sprig and the bay leaf out and discard them.
4. Reduce heat and serve.
