Cheesy Potato Soup Recipe



This cheesy potato soup recipe is a very quick and easy potato soup that uses velveeta cheese to add depth and flavor.

You can add broccoli, cauliflower or bacon to add even more flavor but it's not needed.

I like to call this soup recipe Velveeta Potato Soup.
  INGREDIENTS                        COOKWARE

  • 6 Large Potatoes
  • 1 Garlic Bulb
  • 1 Small Yellow Onion
  • 1 Celery Stalk
  • 1/4 Lb. Velveeta Cheese
  • 1 C. Instant Potatoes
  • 3 C. Vegetable Stock
  • 3 C. Milk
  • 1 1/2 tsp. Black Pepper
  • 1 1/2 tsp. Salt
  • 1 Red Bell Pepper
  • Ladle
  • Dry measuring spoons
  • Large Stock Pot
  • Knife
  • Blender or Food Processor
  • Dry & Liquid Measuring Cups

    Preparing this Easy Potato Soup Recipe.

    1.Slice the velveeta cheese into 1-2 inch thick slices.

    2.Peel and cut potatoes into small cubes.

    3.Peel and finely chop 1/2 of a large yellow onion.

    4.Chop 1 stalk of celery.

    5.Finely chop 1 red bell pepper.

    Cooking this Easy Potato Soup Recipe.

  • Add the potatoes, onion, celery, red bell pepper and vegetable stock to a large pot and bring to a boil. After it starts boiling reduce heat to simmer. Simmer for 15 - 20 minutes.
  • After it simmers for 15 - 20 minutes add the salt, pepper and velveeta cheese and stir until the cheese is completely melted. This can take a little while so be patient.
  • Now turn the heat off and add 1 cup of instant potatoes and stir them in until they are well blended.
  • Now add 3 cups of milk and stir that in well also.
  • One last touch, the cheesy potato soup a little garnish, maybe a little parsley or if you have something better in mind it's your choice.
