1.Slice the velveeta cheese into 1-2 inch thick slices.
2.Peel and cut potatoes into small cubes.
3.Peel and finely chop 1/2 of a large yellow onion.
4.Chop 1 stalk of celery.
5.Finely chop 1 red bell pepper.

Add the potatoes, onion, celery, red bell pepper and vegetable stock to a large pot and bring to a boil. After it starts boiling reduce heat to simmer. Simmer for 15 - 20 minutes.
After it simmers for 15 - 20 minutes add the salt, pepper and velveeta cheese and stir until the cheese is completely melted. This can take a little while so be patient.
Now turn the heat off and add 1 cup of instant potatoes and stir them in until they are well blended.
Now add 3 cups of milk and stir that in well also.
One last touch, the cheesy potato soup a little garnish, maybe a little parsley or if you have something better in mind it's your choice.
