Ingredients

  • 2 1/2 lbs. Potatoes, cubed

  • 1 Large Yellow Onion, chopped

  • 1 Garlic clove, minced

  • 1 Celery stalk, chopped

  • 10 Slices Bacon

  • 1 tsp. Salt

  • 1 Cup Instant potatoes

  • 4 cups Chicken Stock

  • 3 cups Half & Half

  • 1 tsp. Black Pepper


    Preperation for your Cream of Potato Bacon Soup

    These instructions are using a food processor if you don't have one you can chop everything by hand.

  • Peel and quarter 1 large yellow onion.

  • Peel 1 garlic clove and put it in a food processor along with the onions and chop them in it. Set them to the side.

  • Chop 1 celery stalk in quarter inch pieces and set them aside.

  • Peel 2 1/2 pounds of Potatoes and cut them in 1/2 inch cubes. Put them in a large bowl with cold water in it so they don't turn brown.

    Now for the cooking part of this recipe.

    Cooking your Cream of Potato Bacon Soup

  • First you will need to cook about 10 slices of bacon (crispy)in a large frying pan.

  • After the bacon is done, take it out and place it on a plate, then pour about 2/3 of the grease into a small metal container and throw it in the garbage. DO NOT pour it down the drain unless you want to clog it and have a big mess.

  • Pour the chicken broth into a large pot and turn it on medium high heat.

  • Put the frying pan back on the oven burners and turn on medium heat, then add the garlic, celery and onions and saute for 4 to 5 minutes. Stirring Occasionally.

  • While the onions etc. are sauteing crumble the bacon into the large pot with the broth. BE CAREFUL the bacon might still be HOT.

  • After sauteing the mixture for 4 to 5 minutes, add it to the large pot with the chicken broth. Stir it in well, then simmer for 15 minutes. Stirring Occasionally.

  • After simmering for 15 minutes add the cubed potatoes, 3 cups half & half, 1 tsp. salt and 1 tsp. black pepper. Stir Well. Reduce heat to medium and simmer for 45 minutes. Stir a little more then you normally would because the half & half can burn.

  • After 45 minutes add 1 cup of instant potatoes, stir well and now you can serve your cream of potato bacon soup with a smile on your face.
