Cooking your Cream of Potato Bacon Soup
First you will need to cook about 10 slices of bacon (crispy)in a large frying pan. After the bacon is done, take it out and place it on a plate, then pour about 2/3 of the grease into a small metal container and throw it in the garbage. DO NOT pour it down the drain unless you want to clog it and have a big mess.Pour the chicken broth into a large pot and turn it on medium high heat.Put the frying pan back on the oven burners and turn on medium heat, then add the garlic, celery and onions and saute for 4 to 5 minutes. Stirring Occasionally. While the onions etc. are sauteing crumble the bacon into the large pot with the broth. BE CAREFUL the bacon might still be HOT.After sauteing the mixture for 4 to 5 minutes, add it to the large pot with the chicken broth. Stir it in well, then simmer for 15 minutes. Stirring Occasionally. After simmering for 15 minutes add the cubed potatoes, 3 cups half & half, 1 tsp. salt and 1 tsp. black pepper. Stir Well. Reduce heat to medium and simmer for 45 minutes. Stir a little more then you normally would because the half & half can burn. After 45 minutes add 1 cup of instant potatoes, stir well and now you can serve your cream of potato bacon soup with a smile on your face.
