Peel and cube four large potatoes for this creamy soup.Mince one Garlic clove and a small onion and put them in a small container together, set it aside.Chop two celery stalks and the white part of a leek and put them in the same container as the onion and garlic, set them off to the side.Mix 2 tablespoons of All Purpose Flour and cool water in a small bowl and set to the side.

Melt ¼ C. Butter in a large skillet, wait till it gets hot then add the two chopped celery stalks, one minced garlic clove, one chopped leek and one copped onion to the skillet and saute for 4 minutes. Stir Frequently.Now add the cubed potatoes and saute for an additional 4 minutes.After sauteing for eight minutes add three cups chicken broth to a large pot and turn on high heat and add the mixture in the skillet to the pot, that includes the butter.When this simple potato soup starts to boil reduce the heat to a simmer and add the Italian seasoning, parmesan cheese, salt and the flour mixture and Mix Well. Simmer for about 25 minutes.Now add the heavy cream, mix well.
