There are a few important guidelines you need to follow when using a crock pot so that you don't get food poisoning.


Food Safety for your
Crock Pot Soup Recipes

1. When cooking meat or poultry in a crock pot or slow cooker you should cook it on high for the first hour, then turn it to low, so that it reaches 140 degrees quicker. Which will reduce the risk of food poisoning.

2. Most meat with vegetables take at least 8 hours on low to cook thoroughly.

3. Make sure all meat and poultry is defrosted and cut in smaller pieces. If it's not defrosted and is in large pieces they will not cook properly and won't get to 140 degree's fast enough which may result in someone getting sick.

4. If you cut uncooked meats and vegetables and put them in the refrigerator the night before make sure you use different containers for each to stop bacteria from forming and to prevent contaminating the food.


Cooking your Crock Pot Soups evenly

1. Crock pots cook faster on the bottom and fresh vegetables take longer to cook than meat, so place fresh vegetables on the bottom and around the sides and place the meat on top. Frozen vegetables should be placed on top because they do not take as long to cook.

2. Do not overfill the crock pot, only fill the crockpot three quarters full, it will not cook properly if its filled to the top. Make sure the lid fits all the way on or you will lose heat and it wont cook all the way.

3. Don't remove the lid. You don't have to stir it. If you do the crock pot will lose enough heat so that you will have to add an extra 20 minutes to your cooking time. If you want to check on it and see how your crock pot soup recipes or roasts are doing just turn the lid quickly back and forth a few times to remove the condensation so you can look at it.

4. Take off any skin and cut off any fat from the meat, fat and skin will make it cook faster and we don't want that.

5. Browning meat before putting it in the crock pot helps reduce the fat content and caramelizes the sugar which makes the meat look and taste better.

6. Put tender vegetables such as tomatoes and mushrooms in when there
is about 45 minutes left on the cooking time. We don't want to overcook them.

7. Dairy's like sour cream and heavy cream should be added in the last 30 minutes of cooking time and increase the heat to high to keep them from curdling. Cornstarch can be added in the last hour as long as the temperature is on high.

8. Rice and pasta should be added in the last 45-60 minutes to prevent them from getting mushy.

9. Add the spices to your crock pot soups at the end of the cooking time because they tend to fade away over long periods of time.

Stove Top Times = High Temp Crock Pot Times / Low Temp Crock Pot Times

Low heat is about 200 degrees

High heat is about 300 degrees.

15-30 Min. = 1 1/2-2 1/2 Hrs. / 4-8 Hrs.

35-45 Min. = 3-4 Hrs. / 6-10 Hrs.

50 Min.-3 Hrs. = 4-6 Hrs. / 8-16 Hrs.

When converting a recipe from stove top to a crock pot reduce the amount of liquid you use by 1/2, unless your cooking uncooked beans, rice or pasta. Water does not evaporate in a crock pot but beans, pasta and rice soak up a lot of water.

Would you like to save yourself some time?
I sure would but this does not apply to me. I am already saving that time.
How can you save yourself some time? Simple.
Many of the newer models of slow cookers / crock pots are specially designed to, well, make our lives simpler and implemented a saute feature into them.
What does this mean?
No more extra dishes when a recipe calls for sauteing before you slow cook dinner to perfection.
No making a mess trying to get the saute mixture into the crock pot.
It means
"time is precious, every little bit counts."

If you have used one of these versatile appliances then you know where I'm coming from, if not I recommend trying one, borrow a friends and if you like it get one for yourself.

I use the Rival 5-Quart Oval Verseware Crock Pot
at least 2 - 3 times a week and it works great. There is a newer model that Rival has recently added to their arsenal of slow cookers with a lot of great new features.
