Garbanzo Bean Soup Recipe "Spanish Cuisine"
A Garbanzo Bean Soup Recipe that has a touch of
the Spanish culture. It uses pork tenderloin, stewed
tomatoes, garlic, dry wine, Jalapeno, onion, red bell
pepper, celery and chicken stock.
Ingredients
- 1 lb. Pork Tenderloin (cubed)
- 1 small yellow Onion, chopped
- 1/2 C. Dry Red Wine (Cabernet Sauvignon)
- 1 Red Bell Pepper, chopped
- 2 Celery Stalks, chopped
- 1 fresh Jalapeno, chopped
- 1/2 tsp. Salt
- 4 C. Chicken Stock
- 1 15 oz. can Garbanzo Beans
- 4 Garlic Cloves, minced
- 1 14 oz. Can Stewed Tomatoes
Directions
In a large pot simmer the cubed pork tenderloin and the red wine, I prefer Nappa Valley's Cabernet Sauvignon, about 12 minutes. Add the onion, red bell pepper, jalapeno, garlic and stewed tomatoes. Simmer 15 minutes. Add celery, beans and chicken stock. simmer 15 minutes and serve.
