Homemade Tomato Soup Recipe
With a Nice Touch of Basil

This Homemade Tomato Soup Recipe has a great taste of
roasted tomatoes, garlic and basil.

Ingredients


  • 28 oz. can Roasted Tomatoes
  • 2 C. Vegetable Stock
  • 6 Cloves Garlic
  • 1 Bay Leaf
  • 2 Large Yellow Onion, quartered
  • 4 TBS. Butter
  • 2 Carrots, quartered
  • 2 Stalks Celery, quartered
  • 2 Head Garlic, minced
  • 5/8 cup Fresh Basil, chopped
  • salt and fresh ground black pepper to taste
  • 1 Cup Half& Half


How to Cook this Tomato Soup Recipe


1. In a large stock pot heat up 2 TBS. of butter on medium heat.

2. Add garlic, onion, celery and carrots. Cover and saute for 8 minutes.

3. Add Vegetable stock, roasted tomatoes (including juice) and bay leaf.

4. Cover and simmer for 30 minutes.

5. Add half & half, salt, pepper and basil. Simmer 3 minutes, stir, remove bay leaf and puree in a blender. Now Serve.
