How to Cook this Tomato Soup Recipe1. In a large stock pot heat up 2 TBS. of butter on medium heat. 2. Add garlic, onion, celery and carrots. Cover and saute for 8 minutes. 3. Add Vegetable stock, roasted tomatoes (including juice) and bay leaf. 4. Cover and simmer for 30 minutes. 5. Add half & half, salt, pepper and basil. Simmer 3 minutes, stir, remove bay leaf and puree in a blender. Now Serve.
