It was wonderful!

It was -37 in a nearby town in Northern MN today and I made your Creamy Potato Soup. It was wonderful! Nearest shopping is 17 miles away so used some grated onion instead of green onions. I did have fresh parsley and carrots. The red potatoes we grew in our garden in the summer. I added some applewood smoked ham leftover from Christmas dinner. Fabulous recipe, I will make it again. (I cut back slightly on the garlic and thyme).
