Leek Sweet Potato
Soup Recipe


A leek sweet potato soup recipe that is a head turner or should I say a tongue twister.

Delicious down to the very last drop this easy potato soup recipe is packed full of flavor and not to mention its as quick as 1, 2, ok maybe about 30 - 35.

Sweet potatoes are normally called yams in most of the U.S. They are most often used on holidays in such recipes as candied yams.

Sweet potatoes rank the highest in nutrition for dietary fiber, carbohydrates, protein, iron, calcium and vitamins A and C. They are also very high in vitamin B6.

They are great for diabetics because even though they are named sweet potatoes, studies show that they lower insulin resistance and stabilize sugar levels in your blood.

Sweet potatoes with a darker inside color tend to have more vitamin A than the light ones.

Well, enough with the nutrition of this great vegetable.

  INGREDIENTS                                             COOKWARE

  • 5 Sweet Potatoes, cubed

  • 2 Large Leeks (White and Light Green Part only), sliced

  • 2 Garlic clove, minced / crushed

  • 1 TBS. Olive Oil

  • 2 Carrots, sliced

  • 1 tsp. salt

  • 2 TBS. Flour

  • 2 C. Half & Half

  • 3 C. Vegetable Broth

  • 1 C. Cold Water

  • 1/2 tsp. Black Pepper

  • 1/2 tsp. Dried Thyme

  • 3/4 tsp. Dried Dill
  • 1 Stock Pot or Large Pot

  • Ladle

  • Dry measuring spoons

  • Liquid measuring cup

  • Chef Knife / Butcher Knife

     

     

     

     

     

     

     



  • Preparation for your Leek Sweet Potato Soup

  • Slice 2 leeks and 2 carrots into 1/4 inch slices.

  • Crush or mince 2 garlic cloves.

  • Peel and cut 5 sweet potatoes into 1/2 inch cubes.

  • Mix 2 TBS. Flour with an equal amount of luke warm water.


    Cooking Instructions for your Leek Sweet Potato Soup

  • Add 1 TBS. olive oil to the large pot and turn the heat on medium.

  • Add the leeks and garlic and saute for about 5 minutes. Stirring Frequently. Don't let it brown.

  • After 5 minutes add the salt, pepper, dill and thyme. Saute 3 more minutes. Stirring Frequently. If you need to add a little water to keep it from browning then do so.

  • After 3 minutes add 1 C. cold water and turn the heat on medium high.

  • Add the flour mixture, 3 C. vegetable broth, sweet potatoes and carrots. Simmer for 15 minutes. Stirring occasionally.

  • Add the half & half stir and simmer 5 more minutes.

  • Your delicious, healthy and easy potato soup recipe is almost done all you have to do is pour some in a bowl and garnish it. You could use very thin strips of leek or a pinch of nutmeg for garnish.

    You can try something new and bring some excitement to your soup, or maybe your so excited to try it that you don't want to garnish it. If that's the case then that's great because that's what keeps savory soup recipes going. Oh don't forget to turn the burner off you wouldn't want your leek sweet potato soup to burn.

    That's ok though if you do happen to burn one of your soups we have some tips and techniques to help reduce the burnt flavor if its not too bad.
