Lima Bean Soup Recipe
This Lima Bean Soup Recipe is a unique and attractive for the family. It includes lima beans, bacon, carrots, leeks, garlic, chicken broth, fresh parsley and celery.
INGREDIENTS COOKWARE
| 1 Lb. bag Dry Lima Beans
2 Celery Stalk, Chopped
3 Carrots, Sliced
3 Garlic Cloves, Minced
1 Leek, Chopped (white part only)
1/4 C. Fresh Parsley, Chopped
8 C. Vegetable Broth
1 1/2 tsp. salt
1 tsp. Black Pepper

1 Large Pot
1 Large Frying Pan
Food Processor or Anything that will Mince
Ladle
Spatula
Dry measuring cups & spoons
Liquid measuring cup
Strainer / Collander

Preparing the beans for your Lima Bean Soup Recipe.
First, you will need to soak your beans overnight. By doing this you will decrease the cooking time and make them easier to digest. It also helps to reduce the
amount of gas produced by lima beans.
Soak lima beans overnight by adding 3 cups of cold water to each cup of lima beans to a large bowl. Now place it in the refridgerator so they do not ferment. Leave them
in overnight or atleast 8 hours.
Now strain the lima beans and rinse them. The lima beans are now ready to be cooked.
Add the lima beans to a large pot, then add about 6 to 8 cups of water to the pot. Heat to boiling then reduce heat and simmer for 30 minutes.
Preparation for your Recipe.
While your lima beans are simmering :
Chop 1 leek (white part only), 2 celery stalks and a 1/4 cup of fresh parsley, set them aside.
Mince 3 garlic cloves and set them aside.
Slice 3 carrots and set aside.
In a large frying pan cook 4 slices of bacon till its crispy and set the bacon aside.
Now saute the leeks garlic cloves and celery in the bacon grease for about 3 to 4 minutes. Stirring Frequently.
After that the 30 minutes should be up, so it's time to move on.
Cooking your Lima Bean Soup.
Strain the Lima Beans once again and add them back to the pot along with 8 cups of vegetable broth.
Turn the heat on medium-high.
Now add the contents of the frying pan along with the bacon grease.
Add the carrots, parsley, salt and pepper and stir well.
Crumble the crispy bacon into the soup stir one last time and let it simmer on medium heat for about 30 more minutes. Stirring Occasionally.
After 30 minutes taste the Soup and add salt and pepper to taste.
