Potato Cauliflower and
Cheddar Soup Recipe


This Potato Cauliflower and Cheddar Soup Recipe can be made by anyone. It's quick, easy, inexpensive and takes little effort for a delicious cheesy cauliflower soup recipe.

INGREDIENTSCOOKWARE
  • 2 lbs. Potatoes, cubed
  • 1/2 Yellow Onion, chopped
  • 1 Garlic clove, minced
  • 1/4 cup Scallions, white part only, chopped
  • 2 cups Water
  • 4 cups Vegetable broth
  • 1 cup Half and Half
  • 1 lb. Cauliflower florets
  • 1 cup shredded Mild Cheddar cheese
  • 1 cup Croutons, crushed
  • 1 tsp. Salt
  • 1 TBS Butter or Margarine
  • 1/2 tsp Black Pepper
  • Lemon Juice or Vinegar
  • 1 Stock Pot or Large Pot
  • Ladle
  • Spatula
  • Dry measuring cups & spoons
  • Liquid measuring cup
  • Food Processor
  • 2 Large Bowls
  • Colander or Strainer

 

 

 

 

 



Preperation for your Potato
Cauliflower and Cheddar Soup

First you will need to clean your cauliflower. To do this you will need a large bowl, strainer / colander, clean water, and lemon juice or any other type of edible acidic liquid such as vinegar.

  • Cut the cauliflower florets into bite sized pieces or to your desired size. Be careful not to crumble the pieces on accident by pressing on or squeezing the cauliflower to hard.
  • Fill the bowl with clean water and add about 3 tablespoons of lemon juice then stir it in. Now add the Cauliflower to the bowl and let it sit in there for about 10 minutes.

In the meantime you can prepare the rest of the veggies for the soup.

If you make homemade broth, which I highly recommend, then you can save the skins from the onions, garlic and potatoes for the next batch of broth you make. If your not making broth for a few weeks then you can freeze it.

  • Peel potatoes and cut them into 1/2 inch cubes and put them in a large bowl with cold water, so they don't turn brown.
  • Peel 1/2 a yellow onion and chop it into 4 pieces, peel 1 garlic clove.
  • Now add the onion, garlic and 1/4 cup scallions (white part only) to a food processor and chop until desired consistency.

By this time the cauliflower should be ready to be rinsed.

  • Place your colander or strainer in your sink and pour the bowl with the cauliflower in it, into the strainer, slowly so you don't get yourself wet.
  • Now run cold water over the cauliflower for about one minute. Then let the water drain and set it off to the side for now.


Cooking Instructions for Potato
Cauliflower and Cheddar Soup

Now it's time to finally get down to the fun part.

  1. Add 1 tablespoon of butter or margarine to a large pot and melt the butter, on the stove top, on medium high heat.
  2. Add the onion, garlic and scallions to the pot along with 1 teaspoon of salt and 1/2 teaspoon black pepper and saute it inside the pot for about 3 to 4 minutes, Stir Frequently
  3. After sauteing 3 to 4 minutes add 4 cups vegetable broth and 2 cups water. Simmer on medium high heat for 20 minutes. Stirring Occasionally.
  4. After simmering for 20 minutes, add the cauliflower florets and the cubed potatoes and simmer on medium high for 20 more minutes. Stirring Occasionally.
  5. After 20 more minutes, add 1 cup half and half and 1 cup of shredded mild cheddar cheese and simmer for 5 more minutes. Stirring Frequently.

Now your Potato Cauliflower and cheddar soup is almost done but not quite finished yet, you need some garnish. Ladle a couple spoon fulls into a bowl and put some crushed croutons over the soup, this not only makes it look unique but also adds a great flavor. Most recipes for cauliflower and cheddar soup are normally quick but I have utilized our time wisely to make it even quicker and still keep it easy at a low cost.
