Cuban Garbanzo Soup

Quick Ham and Bean Soup

Heres one that is fast and easy to put together and is hearty enough for dinner if you serve it with salad and bread.

1 pound of thick sliced deli ham - cubed
2 15 oz cans of great northern or other white beans
2 quarts of vegetable bullion
1 small onion - diced
2 carrots - sliced
1 small green bell pepper - remove seeds and dice
2 celery stalks - sliced
4 garlic cloves - peeled and sliced thin or grated
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon thyme
1/8 teaspoon nutmeg ( my secret ingredient)

Open the cans of beans and rinse with water. Place in large pot and add the rest of the ingredients. Heat to a boil, reduce heat and simmer until the carrots are just soft, about 10 minutes. Serve hot.
