Red Peppers rule

I can't say for sure why I like these veggies, the color, the sweetness, or perhaps how versatile it is compared to it's lowly cousin the green pepper.
Yes I'll admit I'm biased. I really don't like green peppers at all, green peppers abound, they are everywhere in salads, more salads, sometimes stuffed, snore...I find green peppers boring and lacking real character not to mention they are somewhat a bitter pepper. Now show me a lovely ripe Red Pepper and I'm salivating at the thought of what dish I can turn it into.
It's the sweetness I adore, some may think ehh, what are you talking about sweet? Well these are peppers you have to remember and as far as peppers(commonly available) go these are about as sweet as they get, indeed not a very common attribute for a pepper. This mellow pepper raw is a very nice addition to scads of dishes as is, but roasted (similar to garlic) it almost turns into a different animal err vegetable all together.
Once roasted the aroma that fills your house or backyard is fantastic, the flavor they lend to recipes is almost indescribable. The roasted red pepper and cream cheese chicken salad I just concocted was the best I have ever made, which I give credit to the humble, delicious red pepper.
While not ranking at the highest level of 'Foods of the gods' as does Garlic, Avocado, Pistachios, Olive Oil... it is well deserving of more attention than it's under rated/utilized status affords.
