Chinese Red Bean Soup Recipe

Chinese red bean soup is a perfect sweet dessert soup that can be served hot in the cold winter and fall seasons but also cold in the summer.

Azuki beans are a "yang" or "warming" food (opposite of it's counterpart "yin" or cooling).


They are always found at special celebrations like the Chinese New Year, weddings, birthdays etc. because the very lively color red brings forth luck and happiness.

Tangerine peel promotes healthy digestion, something we all need when eating beans.

INGREDIENTSCOOKWARE
  • 1 cup Azuki (Adzuki) Beans

  • 1 strip Dried Tangerine Peel or
    Fresh Orange Peel

  • 7 cups Water

  • 1/3 cup Lotus Seeds

  • 1/2 cup Brown Sugar

  • 1 cup Coconut Cream
  • 1 Stock Pot or Large Pot

  • Ladle

  • Dry measuring cups

  • Liquid measuring cup

  • Pressure Cooker (optional)

    Chinese Red Bean Soup Recipe

    1. First you need to know how to soak beans, the easiest method is soaking them overnight in the refrigerator. Make sure 2 soak them in 2/3's water to 1/3 beans. Drain the azuki beans.

    2. You want to soak the lotus seeds for about 2 to 3 hours before you start the bean soup.

    3. In a large pot bring 7 cups of water to a boil and add the dried tangerine peel or fresh orange peel.

    4. After 5 minutes of boiling the tangerine peel, reduce the heat to a lower simmer, add the azuki beans and lotus seeds and simmer covered for one hour.

    5. OPTIONAL: In the meantime follow a coconut cream recipe and create some coconut cream.

    6. Now add the brown sugar to the Chinese soup, stir until it's dissolved and simmer another 10 minutes.

    7. Remove the tangerine peel and dish the Chinese bean soup recipe in to bowls and pour some coconut cream in the bowls to create white swirls in the soup. Serve.
