Cold Strawberry Soup Recipe
A delicious refreshing strawberry soup recipe thats great for the summer. Strawberries mixed with yogurt, red rose wine and a touch of orange juice.
Seasoned with sugar and cardamon or nutmeg and ginger.
Served in a wine glass or glass bowl with whipped cream and strawberry syrup drizzled over the top to finish off this beautiful gourmet soup recipe.
It could be served at any fine dining restuarant.
Often looked at as a smoothie, very similar in looks though not as thick.
This recipe is also great for kids as long as you substitute the red wine with some extra water and orange juice.
INGREDIENTS COOKWARE
2 Pints Fresh Strawberries
2 C. Plain or Vanilla Yogurt
1/4 C. Orange Juice
1/3 C. White Sugar
1/2 C. Water
1/8 tsp. Ground Cardamon or 1/8 tsp. Nutmeg and Ginger
1/2 C. Red Rose Wine

Preparation and Cooking Instructions for Your Strawberry Soup Recipe
1. Cut the tops off the strawberries and discard them.
2.Chop 3/4 of a pint of strawberries into 1/2 inch squares.
3. Add the red rose wine, white sugar and the cardamon to the pot and simmer for 10 - 15 minutes. Stirring Occasionally. (If you do not have any cardamon you can replace it with 1/8 tsp. nutmeg and a small pinch of ginger).
4. Add the orange juice, yogurt, water and the rest of the strawberries to a blender or food processor and puree' them.
5. Add the contents of the blender to the to a large bowl.
6. After the contents in the pot has simmered for 10 - 15 minutes remove from heat and add it to the large bowl along with the chopped strawberries. Mix Well and split the mixture up into wine glasses then refrigerate for 1 1/2 - 2 hours.
How to make strawberry drizzle for this Gourmet Soup Recipe
After the refrigeration period you want to add 1/2 c strawberry jam to a small pot and heat on low. Yup that's it. Simple huh?To finish off this cold soup recipe. Put whipped cream in the wine glasses on top of the strawberry soup, drizzle the melted strawberry jam over the whipped cream and serve.What a beautiful sight!
