INGREDIENTS COOKWARE

2 Tbsp Olive Oil
4 Red Potatoes
2 Carrots
1 Medium Onion
2 Garlic Cloves
4 C. Vegetable Stock
1/2 tsp. Salt
1/2 tsp. Black Pepper
2 TBS. Vegetarian Bacon Bits
1/2 Lb. Tofu |

Dry measuring spoons
Large Pot
Knife
Blender

Preparing Your Vegan Potato Soup Recipe
Wash your potatoes with a vegetable brush, you don't have to peel them unless you want to, cut them in 1 inch cubes.
Peel 2 carrots and cube them into 1/4 to 1/2 inch pieces.
Peel and mince 1 medium sized yellow or white onion.
Peel and mince 2 garlic cloves.
Blend 1/2 Lb. tofu in a blender with 2 c. vegetable stock.
Cooking this Creamy Potato Soup Recipe
Add 2 Tbs. olive oil to a large pot and heat on medium.
Add the onions and garlic to the large pot and saute for about 5 minutes. Stirring Frequently.
Add 2 c. cold vegetable stock to the pot and stir. ( Adding cold liquids to it will pull out the nutrients and flovors of the vegetables.)
Add the carrots, potatoes, salt, pepper, 2 c. vegetable stock and vegetarian bacon bits to the pot and stir well. Simmer for 15 - 20 minutes.
Now add the tofu / vegetable stock mix to the soup and stir well. Simmer for 5 more minutes and serve.
