Vegan Potato Soup Recipe.


"Creamy and Delicious Vegan Potato Soup Recipe"

Great for anyone that likes potatoes and tofu. This soup recipe is a great vegetarian appetizer.

It's a quick and easy soup that you will enjoy!

Tofu blended in vegetable broth with cubed red potatoes, carrots, onions, garlic and vegetarian bacon bits creates this great creamalicious soup.

  INGREDIENTS                          COOKWARE

  • 2 Tbsp Olive Oil
  • 4 Red Potatoes
  • 2 Carrots
  • 1 Medium Onion
  • 2 Garlic Cloves
  • 4 C. Vegetable Stock
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 2 TBS. Vegetarian Bacon Bits
  • 1/2 Lb. Tofu
  • Ladle
  • Dry measuring spoons
  • Large Pot
  • Knife
  • Blender
  • Dry & Liquid Measuring Cups

 

 

 



Preparing Your Vegan
Potato Soup Recipe

  • Wash your potatoes with a vegetable brush, you don't have to peel them unless you want to, cut them in 1 inch cubes.
  • Peel 2 carrots and cube them into 1/4 to 1/2 inch pieces.
  • Peel and mince 1 medium sized yellow or white onion.
  • Peel and mince 2 garlic cloves.
  • Blend 1/2 Lb. tofu in a blender with 2 c. vegetable stock.

Potato Soup Recipe

  • Add 2 Tbs. olive oil to a large pot and heat on medium.
  • Add the onions and garlic to the large pot and saute for about 5 minutes. Stirring Frequently.
  • Add 2 c. cold vegetable stock to the pot and stir. ( Adding cold liquids to it will pull out the nutrients and flovors of the vegetables.)
  • Add the carrots, potatoes, salt, pepper, 2 c. vegetable stock and vegetarian bacon bits to the pot and stir well. Simmer for 15 - 20 minutes.
  • Now add the tofu / vegetable stock mix to the soup and stir well. Simmer for 5 more minutes and serve.
