Warm Potato Chowder Recipe

Cold winter days, there is nothing better than potato soup. This is a very simple potato soup recipe that does not take long to make. You can prepare in advance by boiling the potatoes, then it will only take 10 minutes or so to make.
Start with 3-5 medium-sized potatoes (altogether about 500 grams). Boil without peeling. When done, take from the heat, remove the peel, and cut in roughly 1 cm cubes. Put to the side.
Next, chop onions. Here, you can use ordinary onions, but I found it works better if you use salad or silver onions. About half an onion is sufficient. Chop very finely, and put in a large casserole with about 500 cc of water. Bring slowly to boil.
Then add the fish. You can use a fish consomme, but it is nice to use fresh fish if you have it. Let it boil slowly until the meat falls off. Be careful about the bones.
You may want to use a fork to remove the biggest ones. Here, a lot depends on what kind of fish you have, but if you use an ordinary white fish, like cod, about 200 grams should do it. Take off the foam, as well.
Add the potato cubes to the soup. Add about half a teaspoon of salt, and a few grinds from the white pepper mill. You may want to add more salt, that depends on your taste. Let the potatoes warm up.
Last, add 300 cc fresh cream or thick milk. Let the soup thicken. And it is done! For garnish, chop spring onions and sprinkle on top. Eat with bread for a nice, filling meal.
